I love cheese, but I also love being healthy, so if that means eliminating cheese from my diet I will do it....Unless, you create cashew cheese then you can have the best of both worlds.
"Cheddar" Cheese Sauce
- 1 cup raw cashew nuts
- 1/2 red bell pepper
- 1/4 cup water
- 1 tsp raw tahini
- 1-2 tbsp nutritional yeast
- 1 tsp sea salt
- 2 tsp onion powder
- 1 clove of garlic
- 2 tsp lemon juice
Blend in a blender until a smooth consistency. Add more water if it feels too thick. Store in an air tight container up to two weeks.
For a spicier cheese, add jalapenos or chipotle peppers.
I recommend using a high-power blender like VitaMix or Blendtec. If you do not have one, you can soak the cashews for a few hours to help with blending.
Ideas for use: Drizzle on tacos, make cheddar kale chips, use a dip, use in paleo mac n' cheese.
