Chicken Pesto "Sandwich"

I love mushrooms :)

Mushrooms make great ingredients because they are meaty and have great flavor. Some people might disagree, but they are one of my favorite ingredients for any recipe. Portobello mushroom are also great since many vegetarians can use this as a substitute for meat.

Today I decided to make a sandwich  using portobello as the "bread." A little different, but I saw the recipe on Everyday Paleo and was inspired to try it.

For my sandwich, I used my pesto recipe with pieces of grilled chicken, baby romaine and raw cheese. My sandwich didn't hold up as well, so it turned into more of salad. It was still really flavorful and satisfying. Next time I will just make sure its less watery so its not as slippery to hold :)




Chicken Pesto “Sandwich”

Ingredients
  • 2 giant portobello mushrooms, (remove stems and gills)
  • 4oz thinly sliced grilled chicken
  • 1/8 cup basil pesto 
  • 1/2 cup fresh salad mix (arugula, baby romaine, or baby spinach)
  • 1 tbsp coconut oil

Method

In a bowl, mix pesto and chicken. Let it sit for few minutes to allow flavor to combine.

In a large skillet heat the oil and add the mushrooms, with the caps up. Cook for about 5 minutes and flip over. The mushroom should be soft and golden on top.

Remove the mushrooms from the pan and add on the chicken pesto mixture, romaine, and raw cheese to one cap. You can add other ingredients like grilled onions, bacon, or paleo mayo.

Top with other cap and enjoy.
