Cilantro Lime Shrimp

I wanted to make a quick dinner and something easy for tomorrow's lunch. I grabbed some raw shrimp and decided to make a marinade out of some simple items I had in the fridge. This recipe can be served with grilled vegetables, "cauli-rice", or even a salad.


Cilantro Lime Shrimp


Ingredients
  • 28 medium shrimp
  • Juice of 1/2 lime 
  • 3 cloves of garlic, minced
  • 1 cup cilantro
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 bunch scallions
  • salt and pepper to taste
Directions

In a food processor pulse the cilantro, lime juice, garlic, lime juice, cumin, scallions, and salt and pepper to taste. Devein and detail shrimp, and toss with the cilantro puree. Marinate shrimp for up to 4 hours. When ready, pan cook shrimp about 2 minutes each side until opaque. Remove from heat and serve.
