Mediterranean Spiced Salmon

"knocking it out the park"...Those are the exact words of Mr. Beau after he took one bite of this delicious Salmon recipe. After trying over and over, I haven't really "successfully" made Salmon where every piece is juicy and melts in your mouth. For some reason, one side comes out a little drier than other parts, so I decided to change it up. Forget conventional methods that say you have to serve it like a filet. In my honest opinion, I like my method much better because every bite is seasoned with spices. I took some fresh salmon I bought and cut it up into some "bite" size pieces. It worked out perfectly because it cooked evenly and still stayed moist.

I've been eating way too much chicken and needed a change and this recipe is now one of my favorite, hopefully it will become one of yours too. If I haven't said it enough before, salmon is so good for you, its fully of healthy fats that it should be a staple to your diet (unless you're a vegetarian). Mediterranean Spiced Salmon with Garlic Spinach

Spice Rub
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1.5 tsps poultry seasoning
  • 1 tsp dried rosemary (crushed)
  • 1 tsp marjoram (dried)
  • 1 tsp dried basil
  • 1 tsp parsley flakes (dried)
  • 1/8 tsp pepper

In a small bowl, combine all ingredients. You won't need it all, so you should store in an airtight container in a cool dry place for up to 6 months.

Spiced Salmon
  • 1 lb of Salmon Filets
  • Spice rub from above
  • salt to taste
  • Olive oil

Prepare salmon by cutting it up evenly into about 1-2" pieces. Sprinkle generously with seasoning and salt.

In a sauté pan, heat about 2 T of olive oil. Once the oil gets hot, but is not burning, add salmon and sauté until lightly browned and cooked with a hint of pink. Remove to a serving dish and set aside.


Garlic Spinach
  • 1 bag frozen spinach, chopped
  • 1 small onion, diced finely
  • 1 T garlic minced
  • olive oil
  • salt and pepper to taste

In the same sauté pan, heat oil. Add chopped onions and garlic, and sauté until transparent. Add chopped spinach and cook for about 10 minutes. Add salt and pepper to taste. Remove from heat and serve with Salmon.
